Grown at 1800 masl in the highlands of Quindio, Colombia, Pink Bourbon Chai brings out the best of Santiago Quiroga’s farming practices at finca Florencia. The farm’s volcanic soil and cool climate slow down cherry maturation, enhancing the complexity of this varietal. Cherries are hand picked at peak ripeness and naturally processed. The result? A cup with notes of tea, spices, florals, and pink fruits - all carried by a creamy body and sweet tea finish.
But what truly sets this coffee apart is Alma Silvestre’s intentional approach to detailed separation of varietals, careful ripeness selection, and slow sundrying, all of which bring clarity and character to the cup. From cherry selection to drying, their coffee is handled with respect for the varietal’s purity and the surrounding ecosystem. The cup is clean and well-balanced with medium tartaric acidity and aromatic depth–complex, but also smooth and very enjoyable.
